One story tells of Yidi, a mythical figure who crafted wine for Emperor Yu the Great, only for the emperor to warn that excessive indulgence could lead to ruin—a timeless lesson. Another legend credits Du Kang with inventing wine, a name still synonymous with fine spirits today.

2. The Art of Winemaking: Tradition Meets Innovation

Chinese wine is not a monolith but a tapestry of regional specialties:

  • Baijiu (白酒): A fiery distilled spirit, often made from sorghum, with Moutai as its crown jewel. Moutai’s uniqueness lies in its terroir—the red soil, microbial ecosystem, and Chishui River waters of Guizhou—and its “12987” process: 1 year of production, 9 steamings, 8 fermentations, and 7 distillations.

    Wine also bridges cultures. The character for wine, “酒”, combines the radicals for water (氵) and ritual vessel (酉), reflecting its dual role as sustenance and cultural icon.
